Youth and Age
Don't hold on to that kicking and screaming child you once were. Youth is beautiful but it becomes ugly on a mature adult. Look like and embrace your age.

Humans
Humans have not changed their capacity to learn for thousands of years. Did you know that a child born 2,000 ago, if born in the same technological state we are in today, has the same ability to go to school and learn to become a scientist, just as your own child can? When you look at those old pictures, think about that.

Social Musings on Facebook about Beloit

- If you go to the ocean, or the great lakes and can see to the bottom and are amazed beyond words...You could have lived in Beloit near the Rock River.
- If your mother has ever yelled down the stairs, "Ya'll come up here and look at this before I flush it...." No wait, that's a red neck, not a Beloiter!
- If you think Carp and Bull heads are one of the major foods groups, you are most likely a Beloiter.
- If the term, "Welfare Bubble" means nothing to you, clearly you are not from Beloit.
- If you are terrified of leaches, you may have skinny dipped in the Turtle creek.
- If you remember the Majestic or the Ellis theaters in downtown Beloit!
- If you know anyone that bought an over priced, high mileage lemon from Vic Hansen & Sons....you might be from Beloit.
- Remember North States Filling station on the corner of Pleasant and White Ave. Five boys in white would rush to your car, fill your tank, clean your windows, check your oil, all for the cost of the gas! I loved that job. George Mitok was the owner.
- You might be from Beloit if you crave those Pizza Crackers from Tilleys Pizza house.
- If you have ever stood on the pipes below the dam snagging fish with treble hooks, you might be a Beloiter (and incredibly stupid).
- If you have no idea what-so-ever the purpose of the white building called the "Brown Swiss organization" is and what they are? You might be from Beloit.
- Ever played 9-ball at the Carom room and there was so much smoke your throat was sore for days.
- You are from Beloit if you consider Maple Ave and Keeler Ave synonymous with a "shooting gallery" and avoid them like the plague.

Really Hot and Spicy Pickled Eggs
Really Hot and Spicy Pickled Eggs
2 dozen hard-boiled eggs (peeled)
4 cups Distilled White Vinegar
1/8 cup vegetable oil (olive oil)
1 jar sliced hot jalapenos with juice (15 oz.) OR sport peppers in vinegar
1 medium onion (chopped fine)
3 tablespoons Hot habanero Tabasco sauce
1 tablespoon Salt
1 tablespoon Crushed red pepper
1 tablespoon Ground ginger
2 tablespoons Crushed garlic
Bring all of the above ingredients (except eggs) to a boil for 10 minutes in a covered pan. Remove from heat and cool.
Place the hard-boiled eggs in a non-aluminum container and pour the mixture over the eggs, making sure they are covered. Allow eggs to marinate in refrigerator for a minimum of 7 days before serving.

Dads Special Meatloaf
Ingredients
1 1/2 pounds Ground beef
3/4 cups Quaker Oats uncooked
1/2 cups Chili Sauce
1 Egg lightly beaten
1 tablespoon Worcestershire sauce
2 teaspoon Garlic minced or 1tsp Garlic powder
1/2 teaspoon Salt
1/4 teaspoon Pepper
Instructions
Heat oven to 350 degrees F. Combine all ingredients in large bowl; mix lightly but thoroughly. Shape meatloaf mixture into 10x6-inch loaf on rack of broiler pan.
Bake 50 to 55 minutes or until meatloaf is to medium doneness (160 degrees F), until in center and juices show no pink color. Let stand 5 minutes before slicing. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

Black Bean Soup With Roasted Jalapeño Salsa

Serves 4| Hands-On Time: 35m | Total Time: 35m
Ingredients
2 tablespoons plus 2 teaspoons olive oil
1 large poblano or green bell pepper, chopped
2 cloves garlic, chopped
1 large red onion, chopped
kosher salt and black pepper
1 teaspoon ground cumin
2 15.5-ounce cans black beans, rinsed, or 1 heaping cup dried black beans, soaked and cooked
1 12-ounce bottle lager beer
3 to 4 jalapeños, halved and seeded
1/2 cup fresh cilantro leaves
2 tablespoons fresh lime juice
Directions
Heat 2 tablespoons of the oil in a large pot over medium heat. Add the poblano, garlic, all but ⅓ cup of the onion, ¾ teaspoon salt, and ½ teaspoon pepper.
Cook, stirring occasionally, until the vegetables are tender, 8 to 10 minutes. Stir in the cumin.
Add the beans, lager, and ½ cup water. Mash some of the beans with a fork or potato masher. Bring to a boil.
Reduce heat and simmer, stirring occasionally, until the soup is slightly thickened, 6 to 8 minutes.
Meanwhile, heat broiler. Place the jalapeños on a broilerproof baking sheet and broil until charred, 2 to 3 minutes. Slice crosswise.
In a small bowl, toss the jalapeños with the cilantro, lime juice, remaining ⅓ cup onion and 2 teaspoons oil, and ¼ teaspoon each salt and pepper. Serve with the soup.
